Ingredients
  

For the Chicken
  • 4 pieces chicken breasts Make sure to cook until internal temperature reaches 165°F (75°C).
For the Sauce
  • 2 tablespoons olive oil Used to sauté the vegetables.
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • 2 pieces yellow peppers, chopped
  • 1 cup chicken broth
  • 1 cup heavy cream You can substitute with low-fat cream or coconut milk for a lighter version.
  • Salt and pepper to taste
For Serving
  • Cooked rice Served on the side.

Method
 

Preparation
  1. In a large skillet, heat olive oil over medium heat.
  2. Add chopped onion and garlic, and sauté until softened.
  3. Add yellow peppers and cook until tender.
  4. Pour in chicken broth and let simmer.
  5. Blend the mixture until smooth, then return it to the skillet.
  6. Add heavy cream and stir to combine.
  7. Season with salt and pepper.
Cooking Chicken
  1. In a separate pan, cook chicken breasts until golden and cooked through.
Serving
  1. Serve the sauce over the chicken with rice on the side.

Notes

You can garnish with fresh herbs for added color and flavor. Store leftovers in an airtight container in the refrigerator for up to three days.
