Main Ingredients
  • 8 pieces Rice paper wrappers
  • 1 cup Cooked chicken breast, shredded
  • 4 leaves Lettuce leaves
  • 1 cup Fresh herbs (mint, cilantro, or basil) Use a mix for enhanced flavor.
  • 1 cup Rice vermicelli noodles, cooked Prepare according to package instructions.
  • 1 cup Carrots, julienned
  • 1 cup Cucumber, julienned
  • 1/2 cup Dipping sauce (like hoisin or peanut sauce) Choose your favorite sauce.

Method
 

Preparation
  1. Prepare all ingredients: Cook rice vermicelli noodles as per package instructions, and shred the cooked chicken breast. Julienne the carrots and cucumber.
  2. Soften the wrappers: Dip a rice paper wrapper in warm water for a few seconds until softened.
Assembly
  1. Lay the wrapper flat and place a small amount of lettuce, herbs, chicken, noodles, carrots, and cucumber in the center.
  2. Fold the sides over the filling, then roll the bottom over the filling tightly.
  3. Repeat until you’ve used up your ingredients.
Serving
  1. Enjoy with your choice of dipping sauce.

Notes

Leftovers can chill in the fridge for up to two days. Wrap tightly with plastic wrap to keep them moist. Best enjoyed fresh.
