Ingredients
  

Dry Ingredients
  • 2 cups oat flour Can use regular all-purpose flour for a non-gluten-free version.
  • 1 cup brown sugar Adjust for sweetness.
  • 2 teaspoons cinnamon Add more for a stronger flavor.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/4 cup coconut oil, melted
  • 1/4 cup non-dairy milk
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the oat flour, brown sugar, cinnamon, baking powder, and salt.
  3. In another bowl, combine the melted coconut oil, non-dairy milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until a dough forms.
  5. Roll out the dough on a floured surface to about 1/8 inch thick.
  6. Cut into small squares and place them on the baking sheet.
Baking
  1. Bake for 10-15 minutes or until golden brown.
  2. Let cool and enjoy as a cereal or snack!

Notes

Store in an airtight container at room temperature for up to a week. Roll dough thinly for the perfect crunch. Optional: add nuts or seeds for extra texture and nutrition.
