Main Ingredients
  • 2 cups cooked chicken, shredded You can use store-bought rotisserie chicken for convenience.
  • 1/2 cup sweet chili sauce
  • 1 cup lettuce, shredded Any type of lettuce works.
  • 1/2 cup carrots, julienned
  • 1/2 cup red bell pepper, sliced
  • 1/4 cup cucumber, sliced
  • 4 large flour tortillas Can substitute with gluten-free tortillas if needed.
  • 1/4 cup mayonnaise Optional, for added creaminess.
  • Salt and pepper To taste.

Method
 

Preparation
  1. In a bowl, combine shredded chicken and sweet chili sauce until well coated.
  2. Lay out the tortillas on a flat surface.
  3. Spread a thin layer of mayonnaise (if using) over each tortilla.
  4. Add a layer of the sweet chili chicken, followed by the shredded lettuce, julienned carrots, sliced red bell pepper, and cucumber.
  5. Season with salt and pepper to taste.
  6. Fold in the sides of the tortilla, then roll from the bottom to the top to create a wrap.
  7. Cut in half and serve immediately, or pack for later.

Notes

These wraps are best enjoyed fresh, but can be stored in the fridge for up to 2 days. For make-ahead meals, prepare the filling and store it separately.
