Preparation
- In a bowl, combine shredded chicken and sweet chili sauce until well coated.
- Lay out the tortillas on a flat surface.
- Spread a thin layer of mayonnaise (if using) over each tortilla.
- Add a layer of the sweet chili chicken, followed by the shredded lettuce, julienned carrots, sliced red bell pepper, and cucumber.
- Season with salt and pepper to taste.
- Fold in the sides of the tortilla, then roll from the bottom to the top to create a wrap.
- Cut in half and serve immediately, or pack for later.
Notes
These wraps are best enjoyed fresh, but can be stored in the fridge for up to 2 days. For make-ahead meals, prepare the filling and store it separately.
