Method
Preparation
- In a medium bowl, mix the quartered strawberries, sugar, and jam (if using) gently. Refrigerate to let the juices mingle.
- In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.
- Cut the cold butter into the mixture until you get flour-coated pieces about the size of blueberries.
- Stir in the buttermilk until a dough forms. If needed, add a teaspoon or two of extra buttermilk.
- Dump the dough onto a floured surface, shape it into a ball, then flatten into a rectangle about 3/4 inch thick.
- Fold the dough into thirds, rotate, and flatten again. Repeat two more times. Cut out biscuits using a 3-inch cutter without twisting.
Baking
- Preheat the oven to 400℉ and chill the biscuits in the fridge for 10 minutes.
- Butter a skillet or baking sheet, place the biscuits on it, brush with heavy cream, and sprinkle with coarse sugar. Bake for 20-24 minutes until golden brown.
Whipped Cream Preparation
- In a large bowl, combine heavy cream, powdered sugar, and vanilla. Beat on high until stiff peaks form.
Serving
- Serve by slicing the biscuits in half and stuffing them with strawberries and whipped cream. Enjoy immediately!
Notes
For best taste, keep components separate until serving to avoid soggy biscuits. You can prepare biscuits and whipped cream a day in advance.
