Ingredients

For the Cake
  • 2 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup buttermilk, room temperature
For the Strawberry Layer
  • 1.5 pounds fresh strawberries, hulled and sliced
  • 0.25 cup granulated sugar (for the strawberries)
For the Whipped Cream
  • 2 cups heavy whipping cream, chilled
  • 0.25 cup powdered sugar
  • 1 teaspoon vanilla extract (for the cream)

Method

Preparation
  1. Preheat your oven to 350°F. Grease and line two 8-inch round cake pans with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream butter and sugar together until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  5. Gradually add the flour mixture in three parts, alternating with buttermilk, starting and ending with flour. Mix until just combined.
  6. Divide the batter evenly between prepared pans. Smooth the tops.
Baking
  1. Bake for 25-30 minutes, or until a toothpick comes out clean when inserted in the center.
  2. Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
Strawberry Preparation
  1. While cakes are cooling, combine sliced strawberries and 1/4 cup granulated sugar in a bowl. Let sit for 20 minutes to macerate.
Whipping Cream
  1. Whip heavy cream with powdered sugar and vanilla extract until stiff peaks form.
Assembly
  1. Place one cake layer on a serving plate. Spread half the whipped cream over the cake and top with half the strawberries.
  2. Place the second cake layer on top. Spread the remaining whipped cream over the top and decorate with the remaining strawberries.
  3. Chill for at least 30 minutes before serving for the best texture.

Notes

Use room temperature eggs and buttermilk for a light and fluffy texture. To make a vegan version, use a plant-based butter substitute and coconut cream in place of heavy cream. Don't rush the cooling process; let those layers chill before stacking.
