Ingredients
  

Pudding Base
  • 1 can light coconut milk
  • 1/2 cup unsweetened vanilla almond milk
  • 1/4 cup chia seeds
  • 2 tablespoons chia seeds Additional chia seeds for thickening
  • 4 scoops Vital Proteins Collagen Peptides Optional
  • dash fine sea salt
Toppings
  • 1 lb fresh strawberries, thinly sliced
  • 3-4 whole strawberries for garnish
  • 1 cup raw macadamia nuts
  • 1/3 cup shredded coconut

Method
 

Preparation
  1. In a mixing bowl, combine the coconut milk, almond milk, chia seeds, and collagen peptides (if using). Mix well.
  2. Cover the mixture and refrigerate for at least 4 hours or overnight to thicken.
  3. While the pudding is setting, prepare the strawberries by slicing them. Reserve a few for garnish.
Assembly
  1. Once the pudding is set, layer it in serving glasses with the sliced strawberries.
  2. Top the layered pudding with whipped coconut cream and garnish with whole strawberries.

Notes

Store any leftover pudding in an airtight container in the refrigerator for up to 4 days. Keep sliced strawberries separate to maintain freshness. For extra sweetness, add maple syrup or honey. Experiment with different fruits for unique variations.
