- In a mixing bowl, combine the coconut milk, almond milk, chia seeds, and collagen peptides (if using). Mix well.
- Cover the mixture and refrigerate for at least 4 hours or overnight to thicken.
- While the pudding is setting, prepare the strawberries by slicing them. Reserve a few for garnish.
Assembly
- Once the pudding is set, layer it in serving glasses with the sliced strawberries.
- Top the layered pudding with whipped coconut cream and garnish with whole strawberries.
Notes
Store any leftover pudding in an airtight container in the refrigerator for up to 4 days. Keep sliced strawberries separate to maintain freshness. For extra sweetness, add maple syrup or honey. Experiment with different fruits for unique variations.
