Preparation
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a large bowl, mix together the strawberry cake mix, eggs, vegetable oil, and water until well combined.
- Pour half of the batter into the prepared baking dish.
- In a separate bowl, mix the softened cream cheese and powdered sugar until smooth.
- Spread the cream cheese mixture over the batter in the baking dish.
- Layer the chopped strawberries, white chocolate chips, and shredded coconut on top of the cream cheese mixture.
- Pour the remaining cake batter over the top, spreading gently.
Baking
- Bake for 45-50 minutes or until a toothpick comes out clean.
- Allow to cool before serving.
Notes
For added enjoyment, serve with vanilla ice cream and drizzle with chocolate syrup. Store in the fridge for 3-5 days or freeze for up to a month.
