  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated

Method
 

Preparation
  1. In a bowl, mix the miso paste, soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger until smooth.
  2. Coat the chicken with the miso glaze and let it marinate for at least 30 minutes.
Cooking
  1. Preheat the oven to 400°F (200°C).
  2. Place the marinated chicken on a baking sheet lined with parchment paper.
  3. Bake for 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
Serving
  1. Serve the chicken hot over rice or with steamed vegetables, drizzling any extra sauce over the top.

Notes

For deeper flavor, marinate the chicken for a few hours or overnight. You can use different cuts of chicken or customize the glaze with chili flakes for spice. Store leftovers in an airtight container in the fridge for up to three days or freeze for three months.
