Ingredients
  

For the chicken marinade
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha sauce
  • 1 pound chicken breast, sliced thin
For the poke bowl assembly
  • 2 cups cooked sushi rice
  • 1 avocado, sliced
  • 1 cup cucumber, diced
  • 1 cup carrot, shredded
  • 1 cup edamame, cooked
  • 1 mango, diced
  • 2 green onions, sliced
  • 2 tablespoons sesame seeds
  • 1 sheet nori, sliced into strips
  • 2 tablespoons cilantro, chopped
  • 2 tablespoons mayonnaise
  • 1 tablespoon lime juice
  • cooking oil for frying

Method
 

Preparation
  1. In a bowl, combine soy sauce, honey, sesame oil, garlic, ginger, rice vinegar, and sriracha sauce to make the marinade.
  2. Add sliced chicken to the marinade, toss well, and let it sit for 15 minutes.
Cooking
  1. Heat a drizzle of cooking oil in a skillet over medium-high heat.
  2. Add marinated chicken to the skillet and cook for 5 to 7 minutes until cooked through and sticky.
Assembly
  1. Divide cooked sushi rice among bowls, creating a base layer.
  2. Top each bowl with sticky chicken, avocado, cucumber, carrot, edamame, and mango.
  3. Drizzle mayonnaise mixed with lime juice over the toppings.
  4. Garnish with green onions, sesame seeds, nori strips, and cilantro.

Notes

For best flavor, marinate the chicken longer. Feel free to customize toppings and try different proteins.
