Main Ingredients
  • 1 cup grated carrots
  • 1 cup grated zucchini Squeeze out excess moisture before using.
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour Can substitute with whole wheat or gluten-free flour.
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger Adjust according to taste.
  • 1 teaspoon cinnamon Adjust according to taste.
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts or pecans Optional.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large mixing bowl, combine grated carrots, grated zucchini, brown sugar, honey, vegetable oil, eggs, and vanilla extract. Mix well.
  3. In another bowl, whisk together flour, baking powder, baking soda, ginger, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. If desired, fold in the chopped nuts.
  5. Pour the batter into the prepared pan and smooth the top.
Baking
  1. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  2. Allow to cool in the pan before slicing into bars.

Notes

These bars can be served warm or at room temperature, and pair well with tea or coffee. For extra sweetness, serve with yogurt or powdered sugar.
