  • 1 cup butter, softened Ensure butter is at room temperature for easy mixing.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 tablespoons fresh lime juice Adjust to taste if desired.
  • 1 piece Zest of 1 lime
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour Do not overmix the dough once flour is added.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup fresh mint leaves, chopped Add more for a stronger mint flavor.
  • 1/2 cup powdered sugar (for dusting) For a lovely presentation.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Add the eggs, lime juice, lime zest, and vanilla extract, mixing well.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the chopped mint leaves.
  6. Drop rounded tablespoons of dough onto an ungreased cookie sheet, spacing them about 2 inches apart.
Baking
  1. Bake for 10-12 minutes, or until the edges are lightly golden.
  2. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  3. Dust with powdered sugar before serving.

Notes

Store cookies in an airtight container at room temperature for about a week. For longer storage, freeze in a sealed bag for up to three months. Thaw at room temperature before enjoying.
