Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
- Add the eggs, lime juice, lime zest, and vanilla extract, mixing well.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chopped mint leaves.
- Drop rounded tablespoons of dough onto an ungreased cookie sheet, spacing them about 2 inches apart.
Baking
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- Dust with powdered sugar before serving.
Notes
Store cookies in an airtight container at room temperature for about a week. For longer storage, freeze in a sealed bag for up to three months. Thaw at room temperature before enjoying.
