  • 2 lbs chicken thighs or breasts Thighs are juicier and more flavorful.
  • 1 cup peanut butter Provides creamy richness.
  • 1/2 cup soy sauce
  • 1/4 cup honey Adjust to taste for sweetness.
  • 1/4 cup rice vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 cup chicken broth
  • Salt and pepper to taste
For Garnish
  • Chopped green onions For a vibrant pop of color.
  • Peanuts For added crunch.

Method
 

Preparation
  1. In a slow cooker, combine peanut butter, soy sauce, honey, rice vinegar, garlic, ginger, and chicken broth.
  2. Add the chicken pieces, ensuring they are well coated in the sauce.
  3. Season the mixture with salt and pepper.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through and tender.
  2. Once done, shred the chicken in the sauce.
Serving
  1. Serve over steamed rice or noodles, garnished with chopped green onions and peanuts.

Notes

Store leftovers in an airtight container for up to 4 days in the fridge or up to 3 months in the freezer. Reheat with a splash of chicken broth.
