Ingredients

Main Ingredients
  • 2 pounds boneless (skinless chicken breasts, trimmed)
  • 8 ounces cream cheese (block, diced for easier melting)
  • 1 packet dry ranch dressing seasoning mix (1 oz)
  • 6 strips bacon (cooked until crisp and crumbled)
  • 1.5 cups shredded cheddar cheese (freshly shredded preferred)
  • 1/4 cup green onions (sliced)
  • 6 pieces hamburger buns (optional, for serving)

Method

Cooking
  1. Place the chicken breasts, crumbled bacon, and ranch seasoning mix into a 6-quart slow cooker.
  2. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until the chicken is fully cooked and tender.
  3. Shred the chicken with two forks and stir in the diced cream cheese. Cover and cook on LOW for 30 minutes to allow the cream cheese to melt completely.
  4. Sprinkle the shredded cheddar cheese and green onions over the chicken. Cover and cook on LOW for an additional 10 minutes, or until the cheese is melted.
  5. Serve immediately on hamburger buns or enjoy on its own.

Notes

For a pro tip, dice your cream cheese before adding it to the pot to help everything melt uniformly. Leftovers can be stored in the fridge for up to 4 days or frozen for up to 3 months. Reheat with a splash of chicken broth or milk to restore creaminess.
