- In a large skillet, cook the chopped bacon over medium heat until crispy. Remove and set aside on a paper towel to drain.
- In the same skillet, cook the ground beef with the diced onion until browned. Drain excess fat.
- Reduce heat to low, then add cream cheese and shredded cheese to the skillet, stirring until melted and smooth.
- Stir in the diced tomatoes, pickles, garlic powder, and cooked bacon. Season with salt and pepper to taste.
- Transfer to a serving dish and serve warm with tortilla chips.
Notes
This dip can be made ahead of time and stored in the fridge for up to 3 days. Reheat before serving. Variations include using ground turkey or chicken, adding jalapeƱos for spice, or substituting BBQ sauce for a smoky flavor.
