Ingredients
  

For the dip
  • 1 pound ground beef
  • 8 slices bacon, chopped Cook until crispy
  • 2 cups shredded cheese (cheddar or a cheese blend)
  • 1 cup cream cheese
  • 1/2 cup diced tomatoes with green chilies (like Ro*Tel)
  • 1/2 cup diced onion
  • 1/4 cup diced pickles
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Tortilla chips for serving

Method
 

Preparation
  1. In a large skillet, cook the chopped bacon over medium heat until crispy. Remove and set aside on a paper towel to drain.
  2. In the same skillet, cook the ground beef with the diced onion until browned. Drain excess fat.
  3. Reduce heat to low, then add cream cheese and shredded cheese to the skillet, stirring until melted and smooth.
  4. Stir in the diced tomatoes, pickles, garlic powder, and cooked bacon. Season with salt and pepper to taste.
  5. Transfer to a serving dish and serve warm with tortilla chips.

Notes

This dip can be made ahead of time and stored in the fridge for up to 3 days. Reheat before serving. Variations include using ground turkey or chicken, adding jalapeƱos for spice, or substituting BBQ sauce for a smoky flavor.
