Ingredients

  • 1 bag Doritos
  • 1 pound ground beef or turkey
  • 1 packet taco seasoning plus a bit of water as needed
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 2 cups lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup sour cream or Greek yogurt as a topping
  • 1 each avocado, diced (optional)
  • to taste salsa (optional) as a side topping

Method
 

Preparation
  1. In a skillet, cook the ground beef or turkey until browned. Drain excess fat if necessary.
  2. Stir in the taco seasoning with a bit of water and cook according to the seasoning package instructions.
  3. In a large bowl, combine the chopped lettuce, black beans, corn, cherry tomatoes, and shredded cheese.
Assembly
  1. Once the meat is ready, let it cool slightly and then add it to the salad mixture.
  2. Crush the Doritos and fold them in just before serving to maintain their crunch.
  3. Serve with sour cream, diced avocado, and salsa on the side.

Notes

This salad is best enjoyed fresh. If storing leftovers, keep the Doritos separate to maintain their crunch. For a twist, consider different toppings or proteins!
