  • 1 piece ripe pineapple Fresh is best for optimal flavor.
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup coconut milk
  • 1/2 cup rum Can be substituted with non-alcoholic vanilla extract.
  • to taste vegetable oil For frying.
  • to taste powdered sugar For dusting before serving.
  • a few fresh mint leaves For garnish.

Method
 

Preparation
  1. Peel and slice the pineapple into rings.
  2. In a bowl, mix flour, cornstarch, baking powder, and salt.
  3. Gradually whisk in coconut milk and rum until smooth.
Frying
  1. Heat oil in a deep skillet over medium heat.
  2. Dip each pineapple ring into the batter, allowing excess to drip off.
  3. Carefully place rings in hot oil and fry until golden brown on both sides, about 2-3 minutes per side.
  4. Remove and drain on paper towels.
  5. Dust with powdered sugar and garnish with mint leaves before serving.

Notes

For a thicker batter, add extra cornstarch. Consider adding a pinch of cayenne for a spicy kick. These are best enjoyed fresh from the pan!
