Preparation
- Peel and slice the pineapple into rings.
- In a bowl, mix flour, cornstarch, baking powder, and salt.
- Gradually whisk in coconut milk and rum until smooth.
Frying
- Heat oil in a deep skillet over medium heat.
- Dip each pineapple ring into the batter, allowing excess to drip off.
- Carefully place rings in hot oil and fry until golden brown on both sides, about 2-3 minutes per side.
- Remove and drain on paper towels.
- Dust with powdered sugar and garnish with mint leaves before serving.
Notes
For a thicker batter, add extra cornstarch. Consider adding a pinch of cayenne for a spicy kick. These are best enjoyed fresh from the pan!
