  • 1 pound Carrots Similar in size for even cooking
  • 1 cup Ricotta cheese Can substitute with dairy-free ricotta
  • 2 tablespoons Hot honey Adjust amount for desired heat level
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Peel and cut the carrots into even-sized pieces.
  3. Toss the carrots with olive oil, salt, and black pepper.
Cooking
  1. Spread the carrots on a baking sheet and roast for about 25-30 minutes, or until caramelized and tender.
  2. While the carrots are roasting, whip the ricotta cheese until smooth.
Serving
  1. Once the carrots are done, remove them from the oven and let them cool slightly.
  2. Serve the roasted carrots topped with whipped ricotta and a drizzle of hot honey.
