  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups Rice Krispies cereal
  • 1 cup chocolate chips

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. In another bowl, combine the flour, baking soda, and salt. Gradually add this mixture to the creamed mixture.
  5. Fold in the Rice Krispies and chocolate chips.
  6. Drop by rounded tablespoons onto ungreased baking sheets.
  7. Bake for 10-12 minutes or until the edges are golden brown.
  8. Allow to cool for a few minutes on the baking sheet before transferring to wire racks to cool completely.

Notes

If you want cookies with a deeper flavor, brown the butter before mixing. For crispier cookies, bake them an extra minute or two. Using mini chocolate chips can add a fun twist. Store cookies in an airtight container for up to a week or freeze for later use.
