Preparation
  1. In a bowl, combine the mashed potatoes, gluten-free flour, olive oil, and salt. Mix until a dough forms.
  2. If the dough is too dry, add water a little at a time until it holds together.
  3. Divide the dough into equal portions and roll each portion into a flat round shape.
Cooking
  1. Heat a non-stick skillet over medium heat.
  2. Cook each flatbread for about 3-4 minutes on each side or until golden brown.
