  • 1 cup rolled oats Use rolled oats for the best texture.
  • 2 cups milk (or non-dairy milk) Any milk will work, such as almond, soy, or oat milk.
  • 1/4 cup pistachios, chopped Can be swapped with almonds or walnuts.
  • 2 tablespoons honey or maple syrup Adjust to sweetness preference.
  • 1/2 teaspoon vanilla extract
  • pinch salt
Toppings (optional)
  • more pistachios, fresh fruit, yogurt Add as desired for extra flavor and texture.

Preparation
  1. In a bowl or mason jar, combine rolled oats, milk, chopped pistachios, honey (or maple syrup), vanilla extract, and salt.
  2. Stir well to combine.
  3. Cover and refrigerate overnight.
Serving
  1. In the morning, stir again and add your preferred toppings before serving.

Notes

Store any leftover oats in a sealed container in the refrigerator for up to 3 days. For a creamier consistency, you can blend the ingredients before refrigerating. Feel free to mix in other nuts or fruits for additional flavors.
