Preparation
- Preheat the oven to 350°F (175°C) and grease a 9x9 inch baking pan.
- In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition, then stir in the vanilla.
- In another bowl, combine the flour, baking powder, and salt. Gradually add this dry mixture to the wet mixture, stirring until just combined.
- Fold in the shredded coconut.
- Pour the batter into the prepared baking pan and smooth the top.
Baking
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bars cool in the pan, then drizzle the top with pink icing or melted chocolate and sprinkle with additional coconut.
- Cut into bars and serve.
Notes
These bars keep well in an airtight container in the fridge for up to a week. For longer storage, freeze them for up to three months. Microwave for a few seconds before serving if desired.
