  • 2 slices slices of bread Your choice of bread
  • 2 slices slices of cheese Cheddar, mozzarella, or your choice
  • 2 tablespoons pesto Fresh pesto is recommended for best flavor
  • Butter for spreading

Method
 

Preparation
  1. Spread pesto on one side of each slice of bread.
  2. Place a slice of cheese between the two slices of bread, with the pesto side facing in.
Cooking
  1. Heat a skillet over medium heat and melt some butter.
  2. Place the sandwich in the skillet and grill until golden brown on one side, about 3-4 minutes.
  3. Flip the sandwich and add more butter to the pan if needed, cooking until the other side is golden and the cheese is melted.
  4. Remove from heat, slice in half, and serve warm.

Notes

For an extra crispy exterior, brush the bread with melted butter instead of just spreading it. Variations can include sun-dried tomatoes, avocado, or vegan cheese.
