Pudding Base
  • 1/4 cup chia seeds
  • 1 cup almond milk Can be substituted with coconut milk or dairy milk.
  • 1/4 cup lemon juice
  • 2 tablespoons maple syrup Adjust sweetness to taste.
  • 1 teaspoon vanilla extract Optional for added flavor.
  • 1/4 cup Greek yogurt Dairy-free alternatives are available.
  • Optional: Lemon zest For added flavor.

Method
 

Preparation
  1. Combine chia seeds in a mixing bowl.
  2. Whisk almond milk, lemon juice, maple syrup, vanilla extract, and Greek yogurt in another bowl.
  3. Pour the liquid mixture over the chia seeds and stir well.
  4. Add lemon zest if using, and fold in gently.
  5. Transfer to a storage jar and refrigerate overnight.
  6. Stir before serving and enjoy!

Notes

Serve in individual bowls or jars. Top with fresh fruits, nuts, or additional lemon zest for enhanced flavor.
