- Heat olive oil in a large skillet over medium-high heat.
- Season the chicken breasts with salt, pepper, and Italian seasoning.
- Add the chicken to the skillet and cook until browned and cooked through, about 6-7 minutes per side. Remove the chicken and set aside.
- In the same skillet, add garlic, zucchini, and mushrooms. Sauté until the vegetables are tender.
- Add the diced tomatoes with their juice to the skillet and stir well.
- Return the chicken to the skillet, bringing everything to a simmer.
- Cook for an additional 5 minutes to heat through.
- Serve warm, topped with grated Parmesan cheese if desired.
