  • 4 pieces boneless, skinless chicken breasts
  • 2 medium zucchinis, sliced Use fresh zucchinis for best flavor.
  • 8 oz mushrooms, sliced Fresh mushrooms are recommended.
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, with juice Can substitute with marinara sauce for a different flavor.
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper Adjust to your preference.
  • as needed Olive oil for cooking Use as necessary to coat the skillet.
  • to taste Grated Parmesan cheese for serving (optional)

Method
 

Cooking
  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season the chicken breasts with salt, pepper, and Italian seasoning.
  3. Add the chicken to the skillet and cook until browned and cooked through, about 6-7 minutes per side. Remove the chicken and set aside.
  4. In the same skillet, add garlic, zucchini, and mushrooms. Sauté until the vegetables are tender.
  5. Add the diced tomatoes with their juice to the skillet and stir well.
  6. Return the chicken to the skillet, bringing everything to a simmer.
  7. Cook for an additional 5 minutes to heat through.
  8. Serve warm, topped with grated Parmesan cheese if desired.

Notes

Best served warm straight from the skillet. Can be paired with rice, pasta, or crusty bread. Customize with your choice of veggies.
