  • 1 cup chicken broth Vegetable broth can be used as a substitute.
  • 1 cup diced tomatoes Canned or fresh tomatoes can be used.
  • 1 whole onion, chopped Yellow or white onion works best.
  • 1 whole bell pepper, chopped Any color bell pepper is fine.
  • 2 cloves garlic, minced Toasted garlic enhances the flavor.
  • 2 tsp Cajun seasoning Adjust based on your spice preference.
  • to taste Salt and pepper Season according to taste.
  • Parmesan cheese for serving Use grated or shredded cheese.
  • Chopped parsley for garnish Optional, for added freshness.

Method
 

Cooking
  1. In a large pot, sauté the onion, bell pepper, and garlic until softened.
  2. Add the Cajun sausage and cook until browned.
  3. Stir in the diced tomatoes, chicken broth, heavy cream, and Cajun seasoning, then bring to a simmer.
  4. Add the penne pasta and cook until al dente, stirring occasionally.
  5. Season with salt and pepper to taste.
  6. Serve topped with Parmesan cheese and chopped parsley.

Notes

Store in the fridge for 3–5 days or freeze for up to 3 months. Reheat with a bit of cream or broth to restore creaminess. Consider adding spinach or zucchini for a nutritional boost.
