Preparation
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix the mashed bananas and melted butter until well combined.
- Stir in the baking soda and a pinch of salt, then add the sugar, beaten egg, and vanilla extract, mixing until smooth.
- Gradually add the flour, stirring just until incorporated.
- Spoon the batter into the prepared muffin tin, filling each cup about halfway.
- Drop a spoonful of Nutella on top of each muffin and swirl it in with a toothpick or knife.
Baking
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let cool for a few minutes before transferring to a wire rack to cool completely.
Notes
Store these muffins in an airtight container in the fridge for up to 1 week, or freeze for 2-3 months. To warm, pop in the microwave for a few seconds.
