  • 3 pieces ripe bananas, mashed Ensure they are well-mashed for best mixing
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar Adjust to taste if bananas are very ripe
  • 1 large egg, beaten Can swap for flaxseed meal and water for vegan option
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup Nutella For swirling on top

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the mashed bananas and melted butter until well combined.
  3. Stir in the baking soda and a pinch of salt, then add the sugar, beaten egg, and vanilla extract, mixing until smooth.
  4. Gradually add the flour, stirring just until incorporated.
  5. Spoon the batter into the prepared muffin tin, filling each cup about halfway.
  6. Drop a spoonful of Nutella on top of each muffin and swirl it in with a toothpick or knife.
Baking
  1. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  2. Let cool for a few minutes before transferring to a wire rack to cool completely.

Notes

Store these muffins in an airtight container in the fridge for up to 1 week, or freeze for 2-3 months. To warm, pop in the microwave for a few seconds.
