  • 1/4 cup ground flaxseed or chia seeds Adds fiber and omega-3 fatty acids.
  • 1 teaspoon vanilla extract For added flavor.

Preparation
  1. In a large bowl, mix together peanut butter and honey until well combined.
  2. Stir in the oats, chocolate chips, flaxseed, and vanilla extract until fully incorporated.
  3. Use your hands to shape the mixture into small balls, about 1 inch in diameter.
  4. Place the energy bites on a baking sheet lined with parchment paper.
  5. Refrigerate for at least 30 minutes to set.

Notes

Store in an airtight container in the refrigerator for up to one week. Can be frozen, separated by parchment paper to avoid sticking.
