- In a bowl, combine chia seeds, coconut milk, honey or maple syrup, vanilla extract, and cinnamon. Mix well and let it sit for about 10 minutes until it thickens.
- In a blender, blend fresh blueberries until smooth.
- Fold the blended blueberries into the chia mixture.
- Pour the mixture into the prepared crust and spread it evenly.
- Chill in the refrigerator for at least 2-3 hours before serving.
Notes
Serve the pie chilled, slicing it into wedges. Optionally, top with extra blueberries or whipped cream. Store in the refrigerator covered with plastic wrap or foil for 3-5 days.
