  • 1 cup coconut milk (or any milk of choice) Can substitute with other types of milk.
  • 1/2 cup chia seeds Provides thickness and nutritional benefits.
  • 1/4 cup honey or maple syrup Use more for a sweeter pie.
  • 1 teaspoon vanilla extract Enhances flavor.
  • 1/2 teaspoon cinnamon Adds a warm spice note.
For the crust
  • 1 crust crust of choice (e.g., graham cracker or almond crust) Can be store-bought or homemade.
For the topping
  • 2 cups fresh blueberries Make sure they are fresh for the best flavor.

Preparation
  1. In a bowl, combine chia seeds, coconut milk, honey or maple syrup, vanilla extract, and cinnamon. Mix well and let it sit for about 10 minutes until it thickens.
  2. In a blender, blend fresh blueberries until smooth.
  3. Fold the blended blueberries into the chia mixture.
  4. Pour the mixture into the prepared crust and spread it evenly.
  5. Chill in the refrigerator for at least 2-3 hours before serving.

Notes

Serve the pie chilled, slicing it into wedges. Optionally, top with extra blueberries or whipped cream. Store in the refrigerator covered with plastic wrap or foil for 3-5 days.
