  • 1 lb Brussels sprouts Trimmed and halved
  • 2 tbsp Olive oil
  • 2 tbsp Lime juice Freshly squeezed
  • 1 tsp Chili powder Adjust to taste
  • 1 tsp Salt To taste
  • 1/2 cup Cotija cheese Crumbled
  • 1/4 cup Cilantro Chopped
  • 1/4 cup Mayonnaise

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Trim and halve the Brussels sprouts, then toss them with olive oil, lime juice, chili powder, and salt.
Cooking
  1. Spread the Brussels sprouts on a baking sheet and roast for 20-25 minutes until they are crispy.
  2. In a bowl, mix together mayonnaise, lime juice, and a little more chili powder.
  3. Once the Brussels sprouts are roasted, mix them with the mayo mixture. Then, sprinkle with cotija cheese and cilantro before serving.

Notes

Make sure to cut the Brussels sprouts evenly so they roast at the same rate. For an extra creamy texture, add more mayonnaise to the mixture after roasting. Extra toppings like diced avocado or fresh lime juice can enhance flavor.
