- Trim and halve the Brussels sprouts, then toss them with olive oil, lime juice, chili powder, and salt.
Cooking
- Spread the Brussels sprouts on a baking sheet and roast for 20-25 minutes until they are crispy.
- In a bowl, mix together mayonnaise, lime juice, and a little more chili powder.
- Once the Brussels sprouts are roasted, mix them with the mayo mixture. Then, sprinkle with cotija cheese and cilantro before serving.
Notes
Make sure to cut the Brussels sprouts evenly so they roast at the same rate. For an extra creamy texture, add more mayonnaise to the mixture after roasting. Extra toppings like diced avocado or fresh lime juice can enhance flavor.
