Ingredients
  

Main Ingredients
  • 2 pounds Potatoes Washed and cubed
  • 4 tablespoons Olive oil For tossing
  • 4 cloves Garlic Minced (fresh preferred)
  • 2 teaspoons Dried oregano Can substitute with thyme or Italian seasoning
  • 1 cup Feta cheese Crumble before serving
  • 1 teaspoon Salt To taste
  • 1/2 teaspoon Pepper To taste

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash and cube the potatoes into bite-sized pieces.
  3. In a large bowl, toss potatoes with olive oil, minced garlic, oregano, salt, and pepper.
Cooking
  1. Spread the potatoes on a baking sheet in a single layer.
  2. Roast for about 35-40 minutes, turning halfway through, until golden and crispy.
  3. Remove from the oven and toss with crumbled feta cheese before serving.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. Reheat in the oven at 350°F or in the microwave.
