Preparation
- Preheat the oven to 400°F (200°C).
- Wash and cube the potatoes into bite-sized pieces.
- In a large bowl, toss potatoes with olive oil, minced garlic, oregano, salt, and pepper.
Cooking
- Spread the potatoes on a baking sheet in a single layer.
- Roast for about 35-40 minutes, turning halfway through, until golden and crispy.
- Remove from the oven and toss with crumbled feta cheese before serving.
Notes
Store leftovers in an airtight container in the fridge for 3-4 days. Reheat in the oven at 350°F or in the microwave.
