  • 1/2 cup olives (sliced)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 teaspoon oregano
  • 1 teaspoon thyme

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the lemon juice, lemon zest, olive oil, garlic, oregano, thyme, salt, and pepper.
  3. Place the chicken breasts in a baking dish and pour the marinade over them, ensuring they are well coated.
  4. Scatter the sliced olives on top of the chicken.
Cooking
  1. Bake in the oven for 25-30 minutes or until the chicken is cooked through and no longer pink in the center.
  2. Garnish with fresh herbs before serving.

Notes

Make sure to marinate the chicken for at least 30 minutes before baking for maximum flavor. You can use skin-on chicken breasts for extra juiciness. For a spicier kick, add red pepper flakes to the marinade. Try to use fresh herbs instead of dried for a more vibrant taste.
