  • 1/2 cup melted butter Ensure it's thoroughly melted
  • 1/2 cup honey Natural sweetener
  • 2 tablespoons brown sugar Adds a deeper flavor
  • 1 large egg Binding agent
  • 1 teaspoon vanilla extract For flavor
  • 1 1/2 cups rolled oats Use regular or gluten-free
  • 1/2 cup oat flour Can substitute with regular flour
  • 1/2 cup almond meal Adds texture
  • 1 teaspoon baking powder Leavening agent
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon For warmth and flavor
  • 1/2 cup chopped dried apricots For sweetness and chewiness
  • 1/4 cup chopped almonds You can substitute with other nuts

Method
 

Preparation
  1. Preheat your oven to 350°F and line an 8-inch square pan with parchment paper.
  2. In a bowl, stir melted butter, honey, and brown sugar together until smooth.
  3. Beat in the egg and vanilla extract until everything is well combined.
  4. Add the rolled oats, oat flour, almond meal, baking powder, salt, and cinnamon. Stir until a dough forms.
  5. Fold in the dried apricots and chopped almonds evenly.
  6. Press the dough into your prepared pan, forming an even layer.
Baking
  1. Bake for 20 to 25 minutes or until the edges turn a lovely golden brown.
  2. Cool completely in the pan, then lift it out using the parchment paper and cut into bars.

Notes

For a chewier texture, add a splash of milk when mixing. Experiment with other dried fruits or nuts. Ensure oats are measured correctly to avoid dry bars. For a vegan option, replace the egg with a flaxseed egg.
