Preparation
- Preheat your oven to 350°F and line an 8-inch square pan with parchment paper.
- In a bowl, stir melted butter, honey, and brown sugar together until smooth.

- Add the rolled oats, oat flour, almond meal, baking powder, salt, and cinnamon. Stir until a dough forms.
- Fold in the dried apricots and chopped almonds evenly.
- Press the dough into your prepared pan, forming an even layer.
Baking
- Bake for 20 to 25 minutes or until the edges turn a lovely golden brown.
- Cool completely in the pan, then lift it out using the parchment paper and cut into bars.
Notes
For a chewier texture, add a splash of milk when mixing. Experiment with other dried fruits or nuts. Ensure oats are measured correctly to avoid dry bars. For a vegan option, replace the egg with a flaxseed egg.
