  • 1 large Chicken Breast Cooked and shredded
  • 3/4 cup Cottage Cheese Rich in protein
  • 2 Stalks Celery, diced
  • 2 stalks Green Onions, sliced
  • 1/2 cup Shredded Cheddar Cheese
  • 3 tbsp Chopped Fresh Jalapeno Adjust for spice tolerance
  • 5 slices Bacon, cooked and crumbled Smoky flavor
  • 1/2 cup Sour Cream
  • 1/4 cup Chopped Fresh Jalapeno For dressing
  • 1/4 cup Fresh Cilantro, chopped
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Salt
  • Juice of 2 Limes

Method
 

Preparation
  1. Cook and shred the chicken breast.
  2. In a large bowl, mix the shredded chicken, cottage cheese, diced celery, sliced green onions, shredded cheddar cheese, chopped jalapeño, and crumbled bacon.
  3. In another bowl, combine the sour cream, chopped jalapeño, chopped cilantro, onion powder, garlic salt, and lime juice.
  4. Mix the dressing with the salad until everything is well combined.
  5. Chill the mixture in the refrigerator for a little while before serving.

Notes

Best served chilled. Can be enjoyed on its own, in lettuce wraps, or with crackers. Store leftovers in an airtight container for up to 3 days.
