Ingredients
  

Batter ingredients
  • 2 large large eggs
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup almond flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 cup diced ham
  • 1/4 cup shredded cheddar cheese
  • 1 teaspoon olive oil for brushing the waffle iron

Method
 

Preparation
  1. Preheat a waffle iron to medium-high heat and brush both plates with olive oil.
  2. Crack the eggs into a medium bowl and whisk until smooth.
  3. Add the shredded mozzarella, almond flour, baking powder, garlic powder, salt, and pepper, stirring until well combined.
  4. Fold in the diced ham and shredded cheddar cheese.
Cooking
  1. Spoon about 1/3 cup of the batter onto each section of the waffle iron and cook for 4 to 5 minutes, or until the chaffles are golden and set.
  2. Carefully remove the chaffles and serve immediately.

Notes

Store in an airtight container for up to 3 days in the fridge, or freeze for up to 2 months. Reheat in toaster or microwave.
