Preparation
- Preheat a waffle iron to medium-high heat and brush both plates with olive oil.
- Crack the eggs into a medium bowl and whisk until smooth.
- Add the shredded mozzarella, almond flour, baking powder, garlic powder, salt, and pepper, stirring until well combined.
- Fold in the diced ham and shredded cheddar cheese.
Cooking
- Spoon about 1/3 cup of the batter onto each section of the waffle iron and cook for 4 to 5 minutes, or until the chaffles are golden and set.
- Carefully remove the chaffles and serve immediately.
Notes
Store in an airtight container for up to 3 days in the fridge, or freeze for up to 2 months. Reheat in toaster or microwave.
