Japanese Strawberry Fruit Sandwich

Ingredients
  

For the cream
  • 200 ml heavy whipping cream Chill the bowl for best results.
  • 2 tbsp granulated sugar
  • 1 tsp vanilla extract
For the sandwiches
  • 4 slices white sandwich bread Remove crusts before assembling.
  • 8 pieces strawberries Wash and hull, then slice thinly.

Method
 

Preparation
  1. Wash and hull the strawberries, then slice them thinly.
  2. In a chilled bowl, whip the heavy cream with sugar and vanilla until stiff peaks form.
  3. Remove the crusts from all bread slices.
Assembly
  1. Spread an even layer of whipped cream onto two of the bread slices.
  2. Arrange the strawberry slices over the whipped cream on each slice.
  3. Place the remaining two bread slices on top, cream side down, to form sandwiches.
  4. Wrap each sandwich in plastic wrap and chill in the refrigerator for 15 minutes.
  5. Unwrap and slice the sandwiches diagonally before serving.

Notes

Best enjoyed fresh! If you have leftovers, store them in the refrigerator wrapped tightly for 1-2 days. You can use a cookie cutter for fun shapes.
