Ingredients
  

For the dressing
  • 200 grams carrot, peeled and chopped
  • 50 grams onion, chopped
  • 20 grams ginger, peeled and chopped
  • 1 clove garlic, sliced
  • 60 milliliters rice vinegar
  • 30 milliliters soy sauce
  • 15 milliliters sesame oil
  • 120 milliliters vegetable oil
  • 30 grams sugar
  • 60 milliliters water

Method
 

Preparation
  1. Place the carrot, onion, ginger, and garlic into a blender.
  2. Add the rice vinegar, soy sauce, sesame oil, vegetable oil, sugar, and water.
  3. Blend on high speed until the mixture is smooth and creamy.
  4. Taste and adjust seasoning by adding more soy sauce or sugar as needed.
  5. Transfer the dressing to an airtight container and refrigerate for at least 30 minutes before serving.

Notes

For a richer flavor, roast the carrots before blending. Substitute maple syrup for sugar for a more complex sweetness. Adjust consistency with more water if you prefer it thinner. Extra richness can be added with Greek yogurt. This dressing keeps well in an airtight container in the fridge for about one week. You can also make it ahead of time. A touch more ginger can elevate the zing.
