  • 3 cups all-purpose flour
  • 1 packet active dry yeast (2 1/4 tsp)
  • 1 cup warm water About 110°F
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 tablespoon Italian herbs (oregano, basil, thyme)
  • 1 cup shredded cheese (mozzarella or a blend)
  • 2 tablespoons olive oil

Method
 

Preparation
  1. In a small bowl, combine warm water, sugar, and yeast; let it sit for 5-10 minutes until bubbly.
  2. In a large bowl, mix flour, salt, and Italian herbs.
  3. Add the yeast mixture and olive oil to the dry ingredients; stir until a dough forms.
  4. Knead the dough on a floured surface for about 5-7 minutes until smooth.
  5. Place in a greased bowl, cover with a towel, and let rise in a warm place for about 1 hour or until doubled in size.
Baking
  1. Preheat oven to 375°F (190°C).
  2. Punch down the dough, fold in the shredded cheese, and shape it into a loaf.
  3. Place the loaf on a baking sheet and let it rise for an additional 20-30 minutes.
  4. Bake for 25-30 minutes or until golden brown.
  5. Allow to cool slightly before slicing and serving.

Notes

Store leftovers in an airtight container for up to 3 days at room temperature, or wrap in plastic and freeze for up to 3 months. Reheat in the oven for freshness.
