Ingredients

Main Ingredients
  • 4 pieces boneless, skinless chicken breasts (about 2 lbs)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 tablespoon fresh thyme, chopped (divided)
  • 2 tablespoons olive oil
  • 1/3 cup hot honey
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon unsalted butter (optional)
  • 1 cup crumbled feta cheese
  • 1 cup cherry tomatoes (optional)
  • 2 tablespoons fresh parsley, chopped

Method

Preparation
  1. Preheat oven to 400°F (200°C). Pat chicken dry and pound to an even thickness if needed.
  2. Mix salt, pepper, paprika, oregano, and half the thyme. Rub evenly over chicken.
Cooking
  1. Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 3–4 minutes per side until golden.
  2. In a small saucepan over low heat, combine hot honey, garlic, lemon juice, red pepper flakes, and butter. Warm gently for 2–3 minutes.
  3. Pour two-thirds of the hot honey mixture over chicken. Sprinkle feta evenly on top and add cherry tomatoes if using.
  4. Transfer skillet to the oven and bake for 15–18 minutes until the internal temperature reaches 165°F (74°C).
  5. Let it rest for 5 minutes. Drizzle the remaining hot honey glaze over top and garnish with parsley and remaining thyme before serving.

Notes

Don't skip pounding the chicken for even cooking! Feel free to increase red pepper flakes or add jalapeños for more heat. To save time, mix your honey sauce while the chicken is baking. You can also swap feta for goat cheese for a tangy twist or add veggies like zucchini or bell peppers in the skillet while baking.
