  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 cup carrots sliced
  • 1 piece red bell pepper sliced
  • 3 cloves garlic minced
Seasoning and Dressing
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh parsley chopped For garnish

Method
 

Preparation
  1. Preheat the oven to 425°F.
  2. In a large bowl, combine the broccoli, cauliflower, carrots, bell pepper, and minced garlic.
  3. Drizzle the olive oil and honey over the vegetables, then sprinkle with salt and black pepper.
  4. Toss everything until the vegetables are evenly coated.
Cooking
  1. Spread the vegetables in a single layer on a baking sheet.
  2. Roast for 20 to 25 minutes, turning halfway through, until tender and caramelized.
  3. Remove from the oven and sprinkle with chopped parsley before serving.

Notes

Store leftovers in an airtight container for up to 3-4 days. Reheat in the microwave or oven for best results. You can substitute honey with maple syrup for a twist.
