Ingredients

Main Ingredients
  • 4 pieces boneless, skinless chicken breasts
  • 2 large sweet potatoes, peeled and cubed
  • 1 pound green beans, trimmed
Marinade
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • to taste Salt and black pepper

Method

Preparation
  1. In a small bowl, whisk together honey, soy sauce, garlic, olive oil, paprika, thyme, salt, and pepper until well combined.
  2. Marinate the chicken for at least 30 minutes or up to 8 hours in the refrigerator.
Cooking
  1. Preheat the oven to 400°F.
  2. On a lined baking sheet, spread the cubed sweet potatoes, drizzle with olive oil, and season with salt and pepper. Toss to coat.
  3. Roast the sweet potatoes for about 15 minutes until they start to soften.
  4. Remove the baking sheet from the oven and push the sweet potatoes to one side. Place the marinated chicken on the other side, placing the green beans around them.
  5. Drizzle the remaining marinade over the chicken and vegetables.
  6. Bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F and sweet potatoes are tender.

Notes

Feel free to swap the green beans for broccoli or asparagus. Let the chicken marinate longer for maximum flavor. Keep an eye on the sweet potatoes to achieve the desired texture.
