Preparation
- Preheat the oven to 375°F (190°C).
- In a bowl, mix ricotta cheese, Parmesan cheese, basil, parsley, garlic, salt, and pepper until well combined.
- Place a chicken breast on a cutting board and carefully slice it open to create a pocket.
- Stuff each chicken breast with the ricotta mixture and secure with toothpicks or twine.
Cooking
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear the stuffed chicken breast for 3-4 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through.
- Remove from the oven, let it rest for a few minutes, then slice and serve.
Notes
Serve on a bed of sautéed spinach or with a garden salad. Drizzle with balsamic glaze for added flavor. Leftovers can be stored in the fridge for 3-4 days or frozen for longer storage. Reheat in a skillet or oven.
