Ingredients
  

For the chicken rolls
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 cloves garlic, minced Toasted garlic adds a lot of flavor
  • Salt and pepper to taste
  • Olive oil For searing the chicken
  • Toothpicks or kitchen twine For securing the stuffed chicken

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix ricotta cheese, Parmesan cheese, basil, parsley, garlic, salt, and pepper until well combined.
  3. Place a chicken breast on a cutting board and carefully slice it open to create a pocket.
  4. Stuff each chicken breast with the ricotta mixture and secure with toothpicks or twine.
Cooking
  1. Heat olive oil in an oven-safe skillet over medium-high heat.
  2. Sear the stuffed chicken breast for 3-4 minutes on each side until golden brown.
  3. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through.
  4. Remove from the oven, let it rest for a few minutes, then slice and serve.

Notes

Serve on a bed of sautéed spinach or with a garden salad. Drizzle with balsamic glaze for added flavor. Leftovers can be stored in the fridge for 3-4 days or frozen for longer storage. Reheat in a skillet or oven.
