  • 1 cup fresh strawberries, pureed Use fresh strawberries for the best flavor.
  • 1/4 cup honey or maple syrup Adjust according to sweetness preference.
  • 2 tablespoons gelatin (preferably grass-fed) Traditional gelatin is not vegan; can substitute with agar-agar.
  • 1/4 cup water
  • 1 teaspoon lemon juice (optional) For added flavor.

Method
 

Preparation
  1. In a saucepan, combine the pureed strawberries, honey, and water. Heat over medium heat until warm.
  2. Gradually sprinkle the gelatin over the mixture while whisking to ensure it dissolves completely.
  3. Once the mixture is smooth, remove it from heat and stir in the lemon juice if using.
  4. Pour the mixture into silicone molds and refrigerate for at least 2-4 hours or until set.
  5. Once set, gently remove from molds and store in an airtight container.

Notes

Store gummies in an airtight container in the refrigerator for up to a week. For longer storage, freeze them, separating with parchment paper to prevent sticking. You can mix different pureed fruits for variety.
