  • 1 can Coconut milk
  • 1 cup Rice (white or brown)
  • 1 rings Pineapple rings
  • to taste Salt
  • to taste Pepper
  • 1 tablespoon Olive oil
Garnish (optional)
  • 2 tablespoons Green onions Finely chopped, for garnish

Method
 

Preparation
  1. Cook rice according to package instructions using coconut milk instead of water.
  2. Season chicken breasts with salt and pepper.
Cooking
  1. Grill or pan-fry the chicken for about 6-7 minutes on each side until fully cooked.
  2. Grill the pineapple rings for 2-3 minutes on each side until caramelized.
Serving
  1. Serve the chicken over the coconut rice and top with grilled pineapple. Garnish with green onions if desired.

Notes

Start with the rice first for timely serving. Consider adding coconut flakes as garnish for extra flavor. Be generous with salt to enhance flavors.
