Preparation
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the ground chicken over medium heat until browned. Add taco seasoning and mix well.
- In a large bowl, combine the cooked chicken, black beans, corn, salsa, and half of the cheese.
Assembly
- In a greased baking dish, layer half of the tortilla pieces, followed by the chicken mixture, and then the remaining tortilla pieces on top.
- Sprinkle the rest of the cheese over the top.
Cooking
- Bake for 20-25 minutes until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
Serve warm from the oven and customize with toppings. Leftovers can be stored in an airtight container for up to 3 days in the fridge or frozen for up to 2 months.
