Ingredients
  

Main ingredients
  • 1 lb ground chicken Use lean ground chicken for a lighter dish.
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning You can make your own if you don't have any.
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 4-6 tortillas tortillas, cut into pieces Whole tortillas can also be used.
  • 1 cup salsa
Optional toppings
  • sour cream Optional for serving.
  • green onions Optional for serving.
  • jalapeños Optional for serving.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the ground chicken over medium heat until browned. Add taco seasoning and mix well.
  3. In a large bowl, combine the cooked chicken, black beans, corn, salsa, and half of the cheese.
Assembly
  1. In a greased baking dish, layer half of the tortilla pieces, followed by the chicken mixture, and then the remaining tortilla pieces on top.
  2. Sprinkle the rest of the cheese over the top.
Cooking
  1. Bake for 20-25 minutes until the cheese is melted and bubbly.
  2. Let it cool for a few minutes before serving.

Notes

Serve warm from the oven and customize with toppings. Leftovers can be stored in an airtight container for up to 3 days in the fridge or frozen for up to 2 months.
