  • 4 medium potatoes, diced Waxy potatoes recommended for best texture.
  • 1 onion, chopped
  • 2 cloves garlic, minced Toasting the garlic adds flavor.
  • 1 bell pepper, diced
  • 1 teaspoon paprika
  • Salt and pepper to taste Adjust spices to preference.
  • 2 tablespoons olive oil
  • to taste Fresh parsley for garnish Adds color and flavor.

Method
 

Cooking
  1. In a large skillet, heat olive oil over medium heat.
  2. Add the chopped onion and cook until soft, about 3 minutes.
  3. Stir in the garlic and bell pepper, cooking for an additional 2 minutes.
  4. Add the ground beef, breaking it apart with a spoon, and cook until browned.
  5. Stir in the diced potatoes, paprika, salt, and pepper.
  6. Cover and cook for about 25-30 minutes, stirring occasionally, until the potatoes are tender.
  7. Garnish with fresh parsley and serve warm.

Notes

Store leftovers in the fridge for up to 3 days or freeze for up to 3 months. Reheat in a skillet or microwave.
