Ingredients
  

Marinade for Shrimp
  • 1 lb Shrimp Fresh or frozen shrimp, peeled and deveined
  • 2 tbsp Citrus juice (lime or lemon) For marinating
  • 2 cloves Garlic Minced
  • 2 tbsp Olive oil For marinating
  • 1 tsp Salt
  • 1 tsp Pepper
Bowl Assembly
  • 2 cups Rice Any variety, cooked according to package instructions
  • 1/2 cup Cilantro Chopped, to mix into rice
  • 2 tbsp Citrus juice (lime) To mix into rice
  • 4 cups Mixed greens
  • 1 medium Avocado Sliced
  • 1 cup Mango salsa
  • 1/2 cup Chipotle aioli
  • 1 cup Tortilla strips For topping

Method
 

Preparation
  1. Marinate shrimp in citrus juice, minced garlic, olive oil, salt, and pepper for 30 minutes.
  2. Cook rice according to package instructions, mixing in cilantro and lime juice once cooked.
Cooking
  1. Grill shrimp until cooked through and lightly charred.
Assembly
  1. Assemble the bowl by placing a bed of cilantro-lime rice, mixed greens, grilled shrimp, avocado slices, and mango salsa.
  2. Drizzle with chipotle aioli and top with tortilla strips.
  3. Serve and enjoy!

Notes

Store leftovers in the fridge for up to 2 days. Components can be kept separate for freshness.
