  • 1 piece ripe avocado Diced
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 piece cucumber, sliced
  • 1/4 piece red onion, thinly sliced
  • 1/4 cup feta cheese Crumble over salad
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • to taste salt and pepper

Method
 

Preparation
  1. Start by grilling the chicken breasts until fully cooked; let them rest before slicing.
  2. In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, and red onion.
Assembly
  1. Add the sliced grilled chicken and diced avocado on top of the salad.
  2. Crumble the feta cheese over the salad.
Dressing
  1. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  2. Drizzle the dressing over the salad and toss gently to combine.
