  • 2 slices bread Switchable with sourdough or whole wheat for flavor variety.
  • 2 ounces Gouda cheese, sliced Can be replaced with Swiss or cheddar.
  • 1 cup mushrooms, sliced
  • 1/2 onion onion, thinly sliced Use yellow or white onion.
  • 2 tablespoons butter One tablespoon for cooking, one for grilling.
  • to taste Salt and pepper
  • 1 tablespoon olive oil For roasting mushrooms and onions.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a baking dish, toss sliced mushrooms and onion with one tablespoon of olive oil, salt, and pepper. Roast in the oven for about 15-20 minutes until caramelized.
Cooking
  1. Heat a skillet over medium heat and melt one tablespoon of butter.
  2. Place one slice of bread in the skillet, top with Gouda cheese, roasted mushrooms, and onions, then place the second slice on top.
  3. Cook until the bottom slice is golden brown, then flip and add the remaining tablespoon of butter to the skillet.
  4. Cook until the second side is golden and the cheese is melted.
  5. Remove from the pan, slice, and serve warm.

Notes

This sandwich pairs beautifully with tomato soup or a green salad. Store leftovers in foil or an airtight container in the fridge for up to 2 days. Reheat in a skillet for best texture.
