Preparation
- Preheat the oven to 400°F (200°C).
- In a baking dish, toss sliced mushrooms and onion with one tablespoon of olive oil, salt, and pepper. Roast in the oven for about 15-20 minutes until caramelized.
Cooking
- Heat a skillet over medium heat and melt one tablespoon of butter.
- Place one slice of bread in the skillet, top with Gouda cheese, roasted mushrooms, and onions, then place the second slice on top.
- Cook until the bottom slice is golden brown, then flip and add the remaining tablespoon of butter to the skillet.
- Cook until the second side is golden and the cheese is melted.
- Remove from the pan, slice, and serve warm.
Notes
This sandwich pairs beautifully with tomato soup or a green salad. Store leftovers in foil or an airtight container in the fridge for up to 2 days. Reheat in a skillet for best texture.
