Ingredients

For the seasoning
  • 2 tablespoons paprika
  • 2 tablespoons freshly ground black pepper
  • 1 tablespoon kosher salt
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon coriander
  • 1 tablespoon dried dill
  • 1/2 tablespoon crushed red pepper flakes
For the chops
  • 4 pieces boneless pork chops Pat dry before seasoning
  • 1/4 cup olive oil
  • 2 1/2 tablespoons soy sauce
  • 1 teaspoon steak seasoning

Method

Preparation
  1. Mix the steak seasoning in a small bowl.
  2. Pat the pork chops dry. Generously season them with the spice mix, about a tablespoon for each chop.
  3. In another bowl, mix the olive oil, soy sauce, and the remaining steak seasoning together.
  4. Add the pork chops to a zip-lock bag and pour the marinade over them. Let them marinate in the refrigerator for at least 3 hours, or up to 8 for more flavor.
Grilling
  1. Heat the grill to medium.
  2. Grill the chops for 6-7 minutes per side until there's no pink left in the center.
  3. Remove from the grill, let them rest for 5-7 minutes, then serve immediately.

Notes

Serve with a colorful side salad or a helping of roasted veggies. These chops keep well in the fridge for about 3-4 days and can be frozen for up to 3 months. Let them rest after grilling to maintain juiciness.
